Consommé with Meatballs (Frikadeļu zupa)

Broth ingredients:

6 cups beef stock 1.5 litres
2 - 3 potatoes, diced (optional)
1 large onion, chopped
1 - 2 carrots, diced (optional)
2 celery stalks, chopped
1 tablespoon butter 15 ml
fresh dillweed
or parsley for garnish

Sauté vegetables in butter for a few minutes, then add broth, and simmer until vegetables are cooked. Then drop in meatballs, as per recipe:

Meatball ingredients:

1/2 pound ground beef 225 gm
2 tablespoons bread crumbs 30 ml
1 onion, finely chopped
1 tablespoon sour cream 15 ml (optional)
1 egg
salt, pepper, to taste

Mix all ingredients well. Form small round balls and drop into simmering soup. Boil for about 15 minutes. Garnish with fresh chopped dillweed or chopped fresh parsley.
